Seasoning Earthenware

    What to Prepare
  • ・The earthenware you want to season
  • ・A pot big enough to hold it
  • ・A kitchen cloth
  • ・Rice-rinsing water

How to Do It

  • 1.Line the bottom of a pot with a clean cloth, place the earthenware on top, and pour in rice water until the piece is fully submerged.
    • Make sure to thoroughly clean the pot of any oil or residue before use, as leftover stains can cause marks on the earthenware.
    • Place the earthenware in the pot upright, not upside down.
    • If you need to stack pieces, place kitchen paper or a plain clean cloth between them to prevent them from bumping against each other.
  • 2.After bringing to a boil over low to medium heat, continue heating on low for about 20 minutes without letting it boil. Be careful not to let it boil, as this may cause the pot or earthenware to bump against each other and crack.
    • Do not heat for extended periods, as the starch may burn.
    • While the heat is on, keep an eye on the pot at all times.
  • 3.After turning off the heat, let the earthenware cool in the pot with the rice water. Once cooled, remove the piece and rinse it.
    • If left soaking for too long, the earthenware may absorb more water than necessary. Remove the piece once it has cooled to a safe temperature to avoid burns.
  • 4.Wipe with a dry cloth and let the earthenware air dry. Drying times may vary for each piece, but as a guideline, leave it in the sun for at least one day to ensure it is thoroughly dried.
    • Even if the surface appears dry, there may still be moisture absorbed inside. Storing the earthenware without thoroughly drying it can lead to mold growth.

When seasoning a large piece that does not fit into a pot

When seasoning a large piece that does not fit into a pot, prepare a container such as a basin that is large enough to hold the piece. Place the piece in the container, and slowly pour in warm rice-rinsing water until the piece is fully submerged. Once the water has cooled, wash and dry the piece thoroughly. If the pores are not fully sealed after one attempt, repeat the process several times.

When performing the seasoning process using an IH cooker

When using an IH (induction) cooker, placing the ware directly on the bottom of the pot can cause uneven heating, leading to temperature differences within the piece. These differences may create internal strain and result in damage. Please note that the seasoning process using an IH cooker differs from the method using a gas stove.

  • 1.Fold a clean, plain white cloth and place it on the bottom of the pot to create a 3 cm gap between the bottom of the pot and the ware. Then, place the ware on top of the cloth.
  • 2.By creating a space between the bottom of the pot and the ware, the water can circulate more easily, preventing only a part of the ware from being heated directly. When using an IH cooker, please keep the above point in mind. Other than this, the procedure is the same as when using a gas stove.
